Brian Borkowski

 

Brian Borkowski has called Lake Country home for half of his life. He graduated from UW Parkside with a degree in graphic design and illustration, so yes, he can definitely sketch you something! In addition to his creative pursuits, he’s also served as a track and cross country coach at various local institutions, including St. Joan of Arc Catholic Church, University Lake School, and Lake Country Lutheran. Brian is deeply involved in the community, volunteering regularly and genuinely enjoying connecting with people. You’ll often find him at the local bars and restaurants because he firmly believes that networking and building partnerships are essential for success.

Family is everything to him, with his parents, Sharon and Bill, at the core. Brian’s mom is an incredible volunteer, always reminding him to live in the present and find happiness, trusting in God’s plan. His dad, a Marine with a successful career in the telephone business, instilled in him a sense of structure and a deep love for our country, which is evident in both his personal and professional life. Brian considers himself incredibly fortunate for the lessons they’ve taught him and the blessings he’s received.

Q: Please tell us a little bit about your family.

I am incredibly blessed with an amazing family. My wife Laura, whom I’ve been married to for 22 wonderful years, is both patient and loving. Together, we have three incredible children and two adorable fur babies! My lovely daughter, Abby, and her husband Coleman, reside in Lake Mills, and almost two years ago, they made me a proud grandpa. My sons, Zach and Owen, are both remarkable individuals. Zach returned home from Montana last year, while Owen is currently a senior at Oconomowoc High School, making us beam with pride. At home, our dogs Miles and Monty bring boundless joy to our lives and hold the prestigious title of our household’s chief happiness officers.

Q: Please tell us about your life and what you do (whether working in our community, a business owner, volunteer, etc.). How did you choose that path?

My days are bustling; in fact, I often jest about having at least 400 unread text messages! But in all seriousness, I’m the proud owner of Vino Etc, The Etcetera Bar and Grill, and The Pedal Tavern. On top of that, I work full-time at FITBENCH in Ixonia. Transitioning from a lengthy career in corporate America, I opted for the bar and restaurant industry, believing that life is too short not to have a little fun. The truth is, my inspiration stems from my father’s upbringing in the bar business, spanning from Milwaukee to Rhinelander. Witnessing my grandfather’s genuine happiness while engaging with his customers left a lasting impression on me. My father often shared the sentiment: “People didn’t just come to Grandpa’s Bar for a drink; they came to see Grandpa.”

Q: What do you love most about what you do?

I have a deep affection for the PEOPLE WE SERVE, a genuine appreciation for my team, and there’s nothing quite like sharing a story over an ice-cold PBR!

Q: What was the most difficult challenge in getting to where you are now or in your life?

The toughest hurdle we faced was undoubtedly navigating through the challenges brought on by COVID-19. Despite the obstacles, our team rose to the occasion by implementing innovative marketing strategies, introducing engaging games, sustaining our club operations, and ensuring the community’s well-being. Witnessing the smiles on people’s faces during such troubled times was truly heartwarming and made every effort worthwhile.

Q: What is the most rewarding part?

The most fulfilling aspect of this venture is undoubtedly the opportunity to connect with new individuals each day and share laughter together.

Q: What are some of your future goals? Do you have anything exciting coming up that you would like to share?

Our future goals revolve around relentless innovation and the creation of fresh, enjoyable concepts that attract people to our venues. At VINO, renowned for our live music, we’re thrilled to announce upcoming performances by some major new bands. Additionally, we’re unveiling a new lower level, affectionately named “Grandma Bork’s” after my beloved mom. This vintage 70’s lounge boasts a charming bar and promises a unique atmosphere. Meanwhile, at The Etcetera Bar and Grill, we’re gearing up for patio season and can’t wait to welcome guests to enjoy the outdoors.

Q: What advice would you give to someone interested in doing something similar to what you have done/are doing?

The nature of this industry is constantly evolving and incredibly fast-paced. Take your time, be creative and keep NEWNESS and FUN top of mind.

Q: What is your favorite thing about our community, favorite thing to do, or something unique about our community that you love? (Feel free to share as much as you’d like!)

I LOVE OUR community. From vibrant downtown events like Fall Fest, ChiliFest, and the Christmas Market, our town offers an unparalleled sense of togetherness and celebration. In the past, we looked to other cities for inspiration, but now, I truly believe our town is the one setting the standard. The growth and vibrancy we’re experiencing are truly remarkable, and I couldn’t be prouder of our thriving community.

Q: Who is an interesting person you’ve met here in our community, and how have they inspired you?

Todd from Grill 164 is not just a good friend, but also a remarkable leader and invaluable resource in this industry. He embodies class and brings a wealth of knowledge and expertise to everything he does. Truly, Todd is an all-around classy individual whom I deeply admire.

Q: Do you have a favorite coffee shop, cocktail shop, or restaurant?

I have a profound admiration for Inclusion Coffee Company, not only for their exceptional coffee but also for the values they stand for, promoting inclusivity and diversity. When it comes to enjoying a delightful cocktail, there’s no place I’d rather be than Vino, where every sip is a celebration of taste and ambiance. And for a satisfying meal with a side of camaraderie, The Etcetera Bar and Grill is my go-to spot, offering delicious food and an inviting atmosphere.

Q: What 3 words would you use to describe our community?

Engaged, Exciting, Outgoing!

Q: What is something interesting that most people don’t know about you?

I have run the Boston Marathon 5 times – 2:37 Best Time.

Q: What is your favorite book, TV show, movie, poem, or song? Why?

Song – Cody Johnson – Til You Can’t. Here are some lyrics: if you got a chance, take it, take it while you got a chance. If you got a dream, chase it, ’cause a dream won’t chase you back. If you’re gonna love somebody, Hold ’em as long and as strong and as close as you can, ‘Til you can’t.

Q: Who inspires you to be better?

My kids, I want to win for them! The CEO of FITBENCH has a picture of baby birds with their mouths open on his desk. One mouth is shut which is his. He provides for family and eats last.

Q: If you were a drink (can be a coffee drink, alcoholic, non-alcoholic, etc.), what would you be?

Pabst Blue Ribbon Beer.

Q: If you could have lunch with anyone, who would it be with? Why?

Mike Bernard, my late father-in-law, salt of the earth, life of the party, and a great drinking buddy. Miss him.

Q: What is something on your bucket list?

Alaskan Cruise.

Q: What makes you the happiest?

Being in Las Vegas with family and friends.
